My two year old is obsessed with letting the dogs in and out of the house. If Heather or I let one of the dogs out without his help, he freaks out. So a few weeks back when I asked him to let Sadie (one of our babies – the other is Bailey) out and he refused, I knew something was not right. I asked him again and he told me he didn’t want to in one of those I’m-not-sure-about-this voices. So I asked him why and he answered, “Because of that lady out there.” Thinking he was joking, I asked, “What lady?” He said, “Daddy that lady right there,” and he pointed out the French door to a spot on the deck. Of course, there was no one there. Not thinking much about it, I just let her out and went on about my business.

Now fast forward to this past weekend. We we’re outside enjoying the nice weather. Heather was planting flowers, I was working on our goldfish pond, and Jack was running around the yard with the water hose spraying things – one of his most favorite things to do. We’re all working away when we hear Jack say, “I’ll spray you.” Well, actually it was more like “I pay you” – he is a two-year-old after all. Anyway, Heather asked him who he was talking to and he responded, “That lady.” Heather asks, “What lady?” “That lady right there, Mommy,” Jack says. “I spray her.” After she inquired some more Jack told us the lady’s name (which we still can’t understand what he’s saying) and that she was wearing brown clothes. Weird.

Now I’m no stranger to a good ghost story. If y’all heard about the “Spooky Broom” story out of Prattville several years ago, I was with the company that was moving out of that space when the “incident” occurred. I even sat in with a paranormal team as they did an investigation in that space and ours next door. It was fun, but I’m not too sure I believe it all. But this with my kid has me a little miffed. He doesn’t really seem scared of her. But I’m just not sure what to make of the whole thing. I’ve always been told that children and animals are more sensitive to things like this. I guess in my mind, it’s one of my or Heather’s great-grandmothers just checking in to see our precious little guy – a guardian angel, if you will. Y’all this has to be one of the easiest side dishes that can really impress. It has been a real favorite of mine since I was a kid. My Mom always knows if she’s cooking a special meal for me, these have to be on the menu. There’s no need to give the secret of a packet of onion soup mix away. Tell ’em you slaved in the kitchen all day caramelizing onions and prepping. I promise, I won’t tell if you don’t!

Ingredients

  • 5 to 6 medium sized potatoes
  • 1 stick of butter (1/2 cup), melted
  • 1 packet french onion soup mix

Directions

  1. Preheat the oven to 400 degrees F. Cut potatoes into 1 inch chunks leaving skin on, if you wish.
  2. Combine potatoes, melted butter, and onion soup mix in a ungreased baking dish. Mix to coat potatoes.
  3. Bake for 40 to 45 minutes (stirring occasionally) or until potatoes are tender.

  • 1 (1.0 to 1.25-oune) packet french onion soup mix

Instructions

  • Preheat the oven to 400°F. Cut potatoes into 1 inch chunks leaving skin on, if you wish.

  • Combine potatoes, melted butter, and onion soup mix in a ungreased baking dish. Mix to coat potatoes.

  • Bake for 40 to 45 minutes (stirring occasionally) or until potatoes are tender.

    Oh my, I have been making these for years and they are my husband’s favorite potatoes. I think the little ones have a second sight that we seem to loose as we get older. I think it helps them deal with all the new things in life they are learning about.

    What a lovely story about your son. I do believe children are more in tune with their senses than we are. My sister passed away a year ago and one morning my 7 year old grandson ( who was staying over) got up before we did and went into our Florida Room. He told us at breakfast that he saw a lady that looked like me (only smaller) sitting in my Lazy Boy. I believe it was my sister checking on things! I also discovered your site through Southern Plate. I’m trying these taters as soon as I get some dry onion soup!

    The recipe sounds great! I enjoyed the story of “the lady” and your son. My son is 16 now but has “reported” similar experiences over the years. I feel that he still does, but doesn’t share as much. The one that really got my attention was when he was about 4 and he were playing in the back yard and I noticed he kept looking up at his window. When I asked what he was looking at he told me “the man was in his window”. He didn’t seem afraid and couldn’t believe I didn’t see him. He’s very sensitive to sounds and “feelings” in rooms….sounds kinda weird. We pray about it and move on. I don’t want to dismiss what is real to him, but don’t dwell on it too much either. We just chalk it up to angels looking out for him. 🙂 Will look forward to hearing more about “the lady”.

    I love the idea that it is one of his grandmothers or another relative keeping an eye on him. As long as he’s not afraid, there doesn’t seem to be any harm to his lady friend. (Perhaps if he saw pictures of ancestors, he might recognize his lady?)

      Carole – What a GREAT idea! We can see if he recognizes her. He doesn’t seem fearful at all, which leads me to believe even if he is seeing someone, there’s no danger. Like someone else said, it could just be his imaginary friend.

    When my son was two he did spooky stuff like this a lot. We live in the house where my mother was born and where my grandparents lived shortly after they were married. The house has been in the family for over 80 years. So there are all sorts of squeaks and creaks and we’ve mostly grown accustomed to them. He used to talk about a man who told him to “stay away from sugar.” He’s 9 now and doesn’t remember a bit of it. Sounds like you’ve got a real mystery on your hands.

    I found your site through Christy J. This has always been a family favorite at our house (picky teenagers…lol). And I firmly believe in guardian angels, no doubt about it. My sister once had the same type of thing happen with her 2 yr. old son, only he was waving at someone across the backyard. He said he was waving at the man that was waving at him on the porch of our deceased grandparent’s house… the porch just happened to be the place that our grandfather would always sit and wave at neighbors as they past by. It was very comforting to know he was still watching over us. God Is So Good! Really enjoy your site! Keep up the good work!:)

    Oh my….I don’t know what to say. See if you can get him to take you to actually touch the lady. Who knows what goes through their little minds at that age. Recipe sounds simple and good.

      The Lady he speaks of our Lady of Mt. Carmel.. she would be the Mother of Christ. No need to fear. She would appear to children throughout the ages. Our Lady of Fatima in Portugal, Our lady of Lourdes (France) and most recently Medjugore. She appears to children as their minds are pure and untainted by society…. see if your son has talked to the lady. Or see if have some pictures to show him of Our Lady of Mt.Carmel or other mary pictures to see if it is she he sees. Practice regular prayers with your children, this will bring them peace in all things that might stress them..

    Maybe it was an imaginary friend. My sister had one named Vicky. Except when it was thought by my parents that she did something wrong, she always said that Vicky did it. Those taters would go good with some fried eggs, bacon and toast for breakfast. I bookmarked it. Please keep us updated on “The Lady.” I do love a good ghost story.

    Oh my gosh… I just found you through Christy’s blog. I found Christy because I was digging for southern goodness as I’m laid up after foot surgery…. anyway.. I never met a potato I didn’t love. Thanks for sharing this recipe. As an Army wife traveling the country, I crave my southern roots.
    As for “the lady” I truly do believe kids are more open to these things. As long as he’s not afraid, I think it’s fine. It’s those scarey spirits that make me shudder.
