I don't know many people who don't love the refreshing flavor of a lemon. It makes me think of summer even in the dead of winter. Why not try these healthy lemon bar coconut balls for an easy-to-make snack. The lemon flavor pops while the coconut takes a backseat to let the flavor take over. I do love a sweet treat that seems like an indulgence but really, it's low in sugar and cures the craving. Give them a try, I bet you are going to love them!

Lemon Bar Coconut Balls

No Bake Healthy Lemon Bar Coconut Balls (4)

You will need:

½ cup of coconut flour

½ cup almond flour

4 medjool dates, pitted

¼ teaspoon vanilla extract

3 tablespoons of coconut butter, melted

2 tablespoon of lemon juice (1 medium size lemon)

2 teaspoons lemon zest

4 tablespoons coconut oil, melted

Procedure:

Add all ingredients into a food processor. Blend well, about 1-3 minutes.

The ‘dough’ should stick together with a little pressure, making the ball shape easy to form.

I use a small cookie scoop, 2 scoops per ball.

Add to a parchment lined baking sheet and pop in the freezer for 15 minutes.

Letting the lemon bar balls harden makes it easier to add a drizzle.

If eliminating dates due to carb amount, sub ¼-½ cup of nut butter of choice.

These recipes are the best because they are easily adjustable!

If the dough gets too ‘wet’ add a little more almond or coconut flour.

If the dough needs a little extra moisture to stick together, add more melted coconut oil or nut butter.

Feeling a little extra sweet? Maple syrup will do the trick!

Makes 11 lemon bar balls.

Keep refrigerated.

1 ½ tsp of lemon juice

Splash of vanilla extract

To make a little sweeter, add ¼ teaspoon of maple syrup.

Add all ingredients to a microwave safe bowl.

Microwave for 10-15 seconds. Mix well.

Lemon has a tendency to seize up ingredients.

If the drizzle gets too thick, add more coconut oil and pop back into the microwave for a few seconds.

Drizzle on Lemon Coconut Balls and top with lemon zest.
