These Crumbl apple pie cookies are a fun little twist on the original Thanksgiving apple pies. They are made with a chewy oat cookie then topped with homemade spiced apple pie filling and finished off with crunchy oaty cookie crumbs.

These cookies are like hand-help mini apple pies filled with gooey homemade spiced apple filling that uses two kinds of apples for the best flavor ever! With each bite, you will be able to feel warming spices that will just take this apple pie cookie to the next level!

These cookies can be made year-round but I personally love making them instead of making apple pie because it’s a lot more laborious. Plus these are perfect for crowds because you’ll be able to give everyone their own cookie, no slicing required!

Ingredients for this Crumbl apple pie cookie recipe

  • Butter- you can use either salted or unsalted butter, just make sure it is softened.
  • Brown sugar & grnaulated sugar– The brown sugar and granulated sugar will be used in the cookies as in the apple pie filling.
  • Egg– The egg is the binding agent.
  • Vanilla– The vanilla will add depth of flavor to the cookie and to the apple pie filling.
  • Molasses– The molasses will help flavor the cookies even more.
  • Oats– Use old fashion oats for the cookie base and the cookie crumbs.
  • Flour– AP flour works great for this cookie recipe
  • Cinnamon, nutmeg, all spice, ginger– The spices will be used mainly in the apple pie filling but we will add some cinnamon to the cookie dough.
  • Corn starch– The corn starch will help keep the cookies tender and it will also be our thickening agent for the aple pie filling.
  • Baking powder– The baking powder is the leavening agent of the cookies.
  • Salt– A little salt will help balance out the sweetness of the cookies.
  • Apples– You can use whatever apples you like, I used a Fuji apple and a Granny Smiths apple for extra flavor.
  • Lemon juice– The lemon juice will help brighten out the apple pie filling.

How to make apple pie cookies

Apple pie filling

  1. Bring the water, both sugar, cinnamon, nutmeg, all spice, ginger, corn starch to a boil.
  2. Let it boil for 1 minute or until it thickens.
  3. Mix in the sliced apples with the lemon juice and vanilla, stir and cover to cook.
  4. Stir from time to time to ensure everything bakes evenly.
  5. Let the apple pie filling cool down while you make the cookie dough.

Cookie dough

  1. Cream the butter with the sugar until smooth.
  2. Mix in the egg, vanilla, and molasses until combined.
  3. Add in the oats, flour, corn strach, cinnamon, baking powder, and salt until combined.
  4. Scoop out 7 equally sized cookie dough balls and leave 1 tablespoon of cookie dough aside for the crumbs.
  5. Flatten the cookies with a ¼ cup measuring cup and bake in the oven.
  6. Crumbl that 1 tablespoon of cookie dough on a separate baking sheet and bake.

Ingredients

Cookie base

  • ½ cup butter
  • ¾ cup brown sugar
  • 1 large egg
  • 1 tablespoon molasses
  • 1 teaspoon vanilla
  • ¼ cup old fashion oats
  • 1 & ½ cup AP flour
  • ½ teaspoon cinnamon
  • 1 tablespoon corn starch
  • 1 teaspoon baking powder
  • ¼ teaspoon salt

Apple pie filling

  • 2 medium apple peeled and sliced thinly
  • 2 teaspoon lemon juice
  • 1 cup water
  • 3 tablespoon brown sugar
  • 2 tablespoon granulated sugar
  • ½ teaspoon vanilla extract
  • 1 & ½ tablespoon corn starch
  • ½ teaspoon cinnamon
  • teaspoon ginger
  • pinch of allspice
  • pinch of nutmeg

Instructions

Make the apple pie filling

  • In a large bowl, mix the apples and lemon together to keep them from darkening. Set aside.

  • In a medium or large saucepan, add in the water, brown sugar, granulated sugar, vanilla extract, corn starch, cinnamon, ginger, allspice, and nutmeg, and whisk to combine. Bring to a bowl on medium heat and cook for 1-2 minutes or until it thickens a little bit.

  • Mix in the sliced apples and sitr to coat them in the liquid mixture. Cover with a lid and cook for 15-20 minutes, stirring from time to time. The apple should be soft. Remove from the heat and set aside to cool.

Make the cookie base

  • Preheat the oven to 350F then line a baking sheet with parchement paper and set it aside.

  • In a stand mixer bowl, cream the butter, and brown sugar together until smooth. Add in the egg, molasses, and vanilla and mix again to combine.

  • Mix in the oats, flour, cinnamon, corn starch, baking powder, and salt just until the dry mixture disappears. Save about 1 tablespoon of cookie dough aside.

  • Using a large cookie scooper, scoop out 7 equally sized cookie dough balls, place them on the prepared baking sheet and gently press down with the back of a ¼ cup measuring cup. Bake in the preheated oven for 12 minutes. Once the cookies come out, press the center with a measuring cup again in case you lost that well in the center.

  • In a small parchement lined baking sheet crumble the 1 tablespoon of cookie dough and bake in the oven for 6 minutes. Pull out the cookie dough, let it cool down for a few minutes then crumble it some more and bake again for 2 minutes to get it extra crunchy.

Assemble the cookies

  • Top each cookie with the apple pie filling then top it with the oat cookie crumbs and enjoy!

    These cookies are absolutely delicious!! Family approved for sure. I also just modified a bit today, I made the recipe according to instructions the only thing I change was I place the cookie dough in a mini cupcake tin, baked at 350• for 12 minutes, as soon as I pulled them out of the oven I pressed the center with a measuring spoon and let it cool a couple of minutes, removed them from the tin and once completely cooled down you get to fill them up with the apples! And that’s how you make the cutest, tastier mini apple pies

    My family was all over these! I’ll admit, I was a bit hesitant to try as many did not like Crumbl’s version, but these homemade ones were amazing. They were great both warmed and chilled, and I enjoyed mine topped with some whipped cream 😋
