This simple and delicious Sausage, Potatoes & Brussels Sprouts sheet pan recipe is not only easy to make but also requires very little clean up! It's one of the best ways to have a complete meal ready in hardly no time. Chicken sausage and vegetables are roasted all on one sheet pan then topped with a sweet & tangy sauce...that's it!

One of the best parts of almost any sheet pan meal is that it's extremely versatile! You can swap out the Brussels sprouts for broccoli or green beans if you prefer. I also sometimes use russet potatoes instead of gold potatoes depending on what I have at the time. And you can use whatever fully cooked sausage you prefer. One of my favorites is the Chicken & Apple sausage made by Aidells, but feel free to use whichever sausage you like!

HEALTH BENEFITS OF BRUSSELS SPROUTS

Now I’ll admit I didn't start eating brussels sprouts until about 4-5 years ago. It really wasn't cooked hardly at all in my family growing up. As I got older I would find myself going to restaurants and picking anything BUT brussels sprouts on the menu. Once I finally tried them I couldn’t believe how good they were! I even said to myself, “It tastes just like cabbage!” Haha! Funny thing is I absolutely love cabbage. So...a word to the wise: never be afraid to try something new friend!

Ok, back to the health benefits...

High in Antioxidants. Brussels Sprouts have lots of nutrients and they are rich in antioxidants! I talk about antioxidants a lot on my site because they can help your body fight off chronic diseases such as diabetes, heart disease and cancer. So the more antioxidant rich foods you can squeeze into your diet the better!

Fiber. Brussels Sprouts are also a good source of fiber. Fiber helps promote a healthy digestive system and gut health. Some studies also show a higher intake of fiber is associated with lower blood sugar levels.

Great source of Vitamin K. According to this article I read on healthline, just half a cup of cooked brussels sprouts provides 137% of your daily Vitamin K requirement! Vitamin K can help strengthen your bones and protect against osteoporosis and bone fractures.

High in Vitamin C. I’m sure we all could use more Vitamin C! Cooked Brussels sprouts are also a great source for your daily vitamin C requirements!

WHAT YOU’LL NEED FOR THIS RECIPE

Smoked Chicken Sausage - Or whatever “fully cooked” sausage you prefer. I really like Aidells Chicken & Apple Sausage!

Brussels Sprouts - Grab about a pound of fresh brussels sprouts and make sure to wash, trim the ends and cut them in half.

Potatoes - Almost any potato would do. I like to use either gold potatoes or russet potatoes. If using russet, you may want to peel them as the skin is a little thicker.

Oil & Seasoning - I like to use Extra Virgin Olive Oil in this recipe but Avocado oil would work great as well! Full list of spices and seasoning is listed below.

Sheet Pan - A good large sheet pan lined in parchment paper so all of your sausage and veggies can roast evenly in a single layer.

HOW TO TRIM & CUT BRUSSELS SPROUTS

  • First be sure to wash your brussels sprouts and pat dry with a paper towel.
  • Next remove any withered or damaged leaves from the outside of the sprout.
  • Using a sharp knife cut off the tough stem end of each brussels sprout, then cut the sprout in half lengthwise.

HOW TO MAKE SHEET PAN SAUSAGE, POTATOES & BRUSSELS SPROUTS

Full instructions and measurements are included in the recipe below, but here’s a quick overview:

Step One: Cut your sausage links into ½ inch round pieces. Wash and trim your brussels sprouts then cut them in half lengthwise. Wash and cut your potatoes into bite size chunks.

Step Two: Season sausage and vegetables with oil and seasoning in a large bowl. Stir to combine well.

Step Three: Add seasoned sausage and veggies to a parchment lined baking sheet. Bake for 25-30 minutes then enjoy!

LET’S MAKE A SAUCE!

Truth is I'm not a big sauce person, but I really do like that this sauce is super easy to make and does taste really good with this recipe!

This maple and dijon sauce only requires 2 ingredients!! Mix a 2 to 1 ratio of 100% pure maple syrup and dijon mustard in a small container. So I used 2 tablespoons of maple syrup and 1 tablespoon dijon mustard. You can scale up or down depending on how much sauce you want.

Sometimes I add a little fresh cracked black pepper too! Add a top and shake well to combine. That’s it! An easy sweet & tangy sauce to add on top or on the side.

Ingredients

  • 4 chicken sausages, fully cooked sliced into ½ inch thick rounds
  • 1 lb. Brussel Sprouts rinsed, trimmed and cut in half
  • 1 lb. potatoes rinsed and cut into 1 inch chunks
  • 2 tablespoons extra virgin olive oil
  • 1 teaspoon fine sea salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon onion powder
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon dried oregano
  • 1/2 teaspoon dried basil

Instructions

  • Preheat the oven to 425°F.

  • Add the sliced sausages, Brussels sprouts and chopped potatoes to a large bowl. Drizzle with olive oil.

  • Next sprinkle salt, pepper, onion powder, garlic powder, oregano and basil onto sausage and vegetables. Stir to combine, making sure everything is well seasoned.

  • Spread sausage and vegetables onto a parchment lined baking sheet.

  • Bake for 25-30 minutes. Serve with a drizzle of maple dijon sauce and enjoy!
