This quick and easy sheet pan dinner will become your new favorite go to for an easy weeknight dinner. Pierogies, cabbage, and polska kielbasa, a kind of sausage, are cooked all together for a tasty pork main dish that is ready to serve in less than 45 minutes.

The first time my family had pierogies I boiled them before tossing them in a pan with olive oil and spices along with fried sausages, cabbages, peppers, and onions. Everyone loved them but I didn’t love how much time it took to put the whole thing together.

So this was my way of simplifying that whole process to get something still tasty but with a fraction of the effort. It’s perfect for busy weeknights when I don’t have time for, or want to, do a ton of prep work.

We’ve had it 3-4 times in the last couple months and no one has complained yet!

What are pierogies?

Pierogies are a type of dumpling that comes from the region of Central/ Eastern Europe. It is made with a dough wrapped around a sweet or savory filling that can be boiled or pan fried.

For this recipe, we use a savory pierogie that is baked instead of pan fried which still gives you a crisp exterior with a soft interior. If you have never had pierogies before, they are generally mildly seasoned which is good for most kids who are wary of trying new foods.

What flavor pierogies go best with this?

Since the other ingredients in this are very simple you can pair any kind of savory pierogies with them.

For kids who might be more hesitant to lots of new flavors, try just a plain potato pierogie. For more adventurous eaters, look for flavored pierogies or try making your own!

This is a great recipe to make with kids because it is so simple. Even little ones can help toss the cabbage with the oil and spices and lay all of the ingredients out on the cookie sheet.

Ingredients you need

  • Polska kielbasa
  • Cabbage
  • Pierogies
  • Olive oil
  • Salt
  • Black pepper
  • Granulated garlic

Other vegetables you could add are sliced bell peppers and onions. Simply toss them in with the cabbage when preparing them according to the recipe directions below.

Some people swapped the cabbage for green peppers or zucchini because that was what they had. Another suggestion was to use Cajun seasoning instead of the above spices!

My kids don’t love peppers and onions but they do love cabbage so I decided to compromise and just do cabbage. It is very easy to change up whatever veggies you are using for this, so use what they would like best.

How to make this

  1. Preheat the oven and grease a cookie sheet.
  2. Into a bowl, add the cabbage, olive oil, and spices. Toss to coat.
  3. Lay out pierogies on the cookie sheet and season with oil and salt. It is okay if they overlap slightly.
  4. Add the sliced polska kielbasa to the cookie sheet and pile the cabbage into the remaining space.
  5. Bake, stirring the cabbage and flipping the pierogies halfway through.

That’s it! It’s one of the reasons why I love this meal.

For my older kids (ages 10+) I would let them make this on their own. It’s simple enough to make that with a little bit of guidance even slightly younger children could make dinner! Such a great confidence boost to a new chef!

Tips and Tricks

You can substitute a bag or two of coleslaw mix instead of shredding the cabbage yourself. This is especially good if you are working with little ones or you don’t have a lot of time for prep.

Polska kielbasa can be made with many varieties of meat, including pork, beef and turkey. If you cannot find polska kielbasa you can substitute smoked sausage.

Ingredients

  • 16 oz polska kielbasa sliced into 1 inch pieces
  • ½ head of cabbage shredded very thinly
  • 16 oz pierogies any flavor
  • ¼ cup olive oil divided
  • 1 ¼ tsp salt divided
  • ½ tsp black pepper
  • tsp granulated garlic

Instructions

  • Preheat the oven to 400 degrees Grease a cookie sheet with baking spray.

  • Into a bowl, add the cabbage, 3 Tbsp of the olive oil, ¾ tsp salt, the black pepper and granulated garlic. Toss to coat.

  • Lay out pierogies in two short rows on the cookie sheet and drizzle with the remaining 1 Tbsp of olive oil and season with ½ tsp of salt. It is okay if they overlap slightly.

  • Add the sliced polska kielbasa to the cookie sheet and pile the cabbage into the remaining space.

  • Bake for 15 minutes. Stir the cabbage and flip the pierogies. Bake for an additional 15 minutes.

Notes
