These are a great option to make for those who are very busy and want a fun dessert to impress, but don’t have a ton of time to make it. With this recipe you simply add the dry ingredients with the wet ingredients to make the cake batter.

WHAT ARE CAKE POPS?

Cake pops are a type of dessert that is made by mixing crumbled cake with frosting or cream cheese, rolling the mixture into balls, and then inserting cake pop sticks into the center. The cake balls are then coated in chocolate, candy melts, or other types of candy coating and decorated with sprinkles, nuts, or other toppings.

Cake pops are a fun and popular treat for parties, weddings, and other special events. They can be made in a variety of flavors and colors, and can be customized to match the theme of the occasion.

It’s also a great way to use up leftover cake, and are a fun and creative way to present desserts. They can also be called cake truffles, dip cake balls, or balls of cake.

INGREDIENTS FOR THE RED VELVET CAKE POPS

You will need the following ingredients listed below to make these red velvet cake bites (the exact measurements and full recipe are in the recipe card at the end of this post):

  • Red velvet cake mix –using boxed cake mix is an easy way to save yourself tons of time in the kitchen, I used Betty Crocker Red Velvet. You could also use a gluten free cake mix if you needed these to be gluten free, or make a homemade red velvet cake using red food coloring and cocoa powder.
  • Frosting of choice –I used Betty Crocker Whipped Cream Cheese Frosting. A homemade cream cheese frosting would also work great.
  • White chocolate wafers –a white candy coating looks more aesthetic against the gorgeous red color interior, however dark chocolate wafers would work as well! You can also use white chocolate chips or red candy melts.

The inside of the cakes pops is a combination of cake mixed with frosting, which gives it the gooey soft texture. The cake pop chocolate coating is simply melted candy melts, or alternatively you can us melted white chocolate.

HOW TO MAKE THIS DELICIOUS TREAT

Start by preparing your cake by package directions. Beat cake mix, water, vegetable oil, and eggs in a large mixing bowl.

Pour the batter into a greased 9×9-inch baking dish or two 8×8-inch round cake dishes and bake in a 350 degree F oven until a toothpick inserted into the center comes out clean.

Let the cake cool completely, then crumble it with a fork in a large bowl or in the baking dish. Set aside 1/2 cup of crumbled cake to decorate the outside of the cake pops.

Stir the frosting into the crumbled cake, cover with plastic wrap, and freeze until chilled.

Use a cookie scoop and your hands to roll the mixture into evenly sized small balls and place on large baking sheet. You want to try make them all a consistent size – aim for the size of a ping pong ball.

Freeze again until balls are hard.

It’s easier to roll the cake & frosting mixture into perfectly round balls if it’s cold. The cake & frosting mixture is super moist, and at room temperature it makes it extremely difficult to shape them perfectly.

Once they have been frozen, I give them another little roll to smooth out the sides. Then place on a cookie sheet.

Melt candy melts in the microwave or in a double boiler. Dip lollipop sticks into the melted chocolate, then stick into one of the frozen cake balls.

Do this with all of them and put back in freezer till they are solidified.

Gently dip cake pops into the melted chocolate or spoon the chocolate onto balls and twirl to coat, letting the excess chocolate drizzle off onto parchment paper. Decorate with the crumbled cake that was set aside.

Place them upright in a styrofoam block, or a cardboard box to harden. There you have it, you have easy bite-sized treats!

HOW TO STORE

To store this cake pop recipe, follow these simple steps:

  1. Allow the red velvet cake pops to cool completely before storing them.
  2. Place the cake pops in an airtight container. You can use a plastic container with a tight-fitting lid or a glass container with a rubber seal.
  3. If you’re storing multiple layers of cake pops, separate each layer with a sheet of wax paper to prevent them from sticking together.
  4. Store the cake pops in the refrigerator for up to 5 days. For longer storage, you can freeze them in a freezer bag for up to 2-3 months.

When you’re ready to serve the cake pops, let them sit at room temperature for a 15-20 minutes to take the chill off. This will help them taste their best. Enjoy!
