These homemade oreo ice cream sandwiches are easy to make and perfect for the warmer months. They're made with a two-ingredient oreo crust with a creamy no-churn oreo ice cream filling.

While the manufacturers of Oreos already came out with their own line of oreo ice cream sandwiches, there's nothing like making your own variation at home. I personally actually prefer these homemade oreo ice cream sandwiches to the store-bought ones.

These ice cream sandwiches have a crunchy oreo crust, whereas the store-bought ones are soft and don't have the hallmarks of actual oreo cookies with their crunchy black biscuits.

This recipe takes what you know and love about oreos and turns them into a refreshing frozen dessert that is seriously easy to make.

  • 9x9" square pan - This recipe is scaled for a 9x9" square pan. Use a pan with walls that are at least 2" high to accommodate the height of the ice cream sandwiches.
  • Food processor - A food processor is optional but it will make crushing the oreo cookies into crumbs much easier and faster. If you don't have a food processor, you can put the oreos in a large ziploc bag and crush them with a rolling pin instead.
  • Electric hand mixer - Use an electric hand mixer to whip up the cream to stiff peaks quickly. You can also use a whisk and manually whip the cream but it will take longer and your arm will probably get tired!

Ingredients

  • Oreo cookies - You'll need about 50 whole oreo cookies for the crust and for the ice cream.
  • Unsalted butter - Melt your butter in the microwave or on the stovetop before using it. This helps hold the crust together.
  • Heavy cream - This recipe involves whipping air into heavy cream to make a creamy and fluffy no-churn ice cream.
  • Vanilla extract
  • Condensed milk - This acts as a sweetener and it also helps prevent ice crystals from forming during the freezing process so that the ice cream doesn't become icy.

How to make oreo ice cream sandwiches

Prep - Line a 9x9" square pan with parchment paper and set aside.

Crush oreos - Use a food processor to blitz the oreo cookies into fine crumbs. If you don't have a food processor, add the oreos to a ziploc bag and smack them thoroughly with a rolling pin until finely crushed. Weigh out 100g of the oreo crumbs into a separate bowl and set aside for later.

Make oreo crust mixture - Transfer the rest of the oreo crumbs to a medium mixing bowl. Add the melted butter and stir to combine until the crumbs have been saturated and the mixture resembles wet sand.

Press crust into pan - Add half of the oreo mixture to your prepared pan. Use a spatula or the bottom of a small cup to press the cookie crust into a flat, even layer on the bottom of the pan. Let this chill in the freezer while you prepare the ice cream filling. Cover and keep the bowl of the remaining oreo mixture somewhere warm.

Whip cream - In a large mixing bowl, use an electric hand mixer to beat heavy cream and vanilla extract until it becomes stiff peaks.

Mix oreo ice cream mixture - Slowly pour the condensed milk into the whipped cream while folding the mixture together with a spatula until no streaks remain. Add the 100g of oreo crumbs you set aside earlier to the cream mixture and fold together until just combined.

Freeze ice cream layer - Pour the ice cream mixture on top of the chilled oreo crust. Smooth into an even layer with an offset spatula. Freeze for 1-2 hours until the surface of the ice cream is firm to the touch.

Add second layer of crust - Gently spread the remaining oreo crust mixture on top of the ice cream layer. Use the same flat-bottomed cup to press the crust into a flat and even layer, being careful not to press too hard as the middle of the ice cream may not be solid throughout yet.

Freeze - Freeze again for at least 6 hours or overnight, preferably.

Cut into slices - Once frozen, lift the ice cream block out of the pan by the edges of the parchment paper. Run a sharp knife under hot water and wipe dry and cut the block into 8 rectangular slices. Serve immediately or return the individual ice cream sandwiches to the freezer for later.

Storage

Store these oreo ice cream sandwiches in an airtight container or wrapped in plastic wrap in the freezer for up to 3 weeks.

Tips and tricks

  • Crush the oreo cookies finely. The finer your oreo crumbs are, the flatter and more even your ice cream sandwich crust will be. The crumbs will also absorb the melted butter more evenly for a crust that stays together rather than crumbling apart.
  • Use a heavy cream with a high fat content. The 36%+ fat content of heavy cream makes a richer and smoother homemade ice cream that isn't as icy. Whipping cream with a fat content of 30-36% works just as well for a lighter taste.
  • Freeze well. The finished ice cream sandwiches should be frozen overnight to ensure they are solid all the way through. I would recommend freezing them again for a couple of hours after slicing them to re-solidify any edges that may have melted while you were slicing them.
  • Try different flavour variations. This oreo crust makes a great base for many different flavours of ice cream. Try changing out the ice cream flavour for a whole new dessert. Instead of adding oreo crumbs to the ice cream mixture, try adding matcha powder, cocoa powder, espresso powder, or stirring in strawberry puree.

      You can use any pan or container as long as it has walls that are at least 2" tall to hold the full height of the sandwiches. If you're using a pan or container that's bigger or smaller than 9x9", you'll have to either scale the recipe yourself to make more or less OR just eyeball the layers so that they're the thickness that you want.

    The taste is amazing but I found the proportions way off. 500g heavy whipping cream (I used Country Crock plant based as I have an ANA dairy kid) whips up to a ton of ice cream. My 9 inch square pan was completely full when I put the cream mixture in. It did not translate into ice cream sandwiches, but cake. Next time I will half the amount of the cream mixtures….but the full recipe would make an amazing ice cream cake in a spring form pan with the Oreos as a crust.

    Really delicious! I made it with gluten-free Oreos and it turned out great. Only thing I changed is I cut it into much smaller pieces - more like ice cream bites than sandwiches. The butter in the crust makes it super rich and much more heavy than a regular ice cream sandwich. Still delicious and will definitely make again, thanks!
