One pan kielbasa hash is an easy, crowd-pleaser of a meal. It’s perfect for breakfast, lunch, or dinner. Turkey kielbasa is sautéed until crispy, and then tossed with cooked peppers, onions, and shredded hash browns. Top this hash with some over-easy eggs for the perfect meal.

All about this recipe

I have been making some variation of this recipe for my family for years! I first saw the idea for a kielbasa hash on a Pinterest board (maybe 10 years ago? We weren’t even married yet) from my friend who made it for dinner. It included traditional kielbasa, olive oil, and sweet potatoes, which are all delicious, of course. I was always amazed by how the flavor of the kielbasa permeated the dish, and required virtually no other seasoning.

Over the years, the recipe has evolved in my home, as I realized that turkey kielbasa is healthier and equally delicious, that sweet potatoes sometimes take too long to cook, and that tons of olive oil isn’t always necessary when cooking. So this is my “lightened-up” variation of something we have been eating for years as a family.

Sometimes I serve pierogis on the side of this dish, and I almost always serve this dish with eggs on top. It has become one of my “go-to” meals, especially for busy weeknight dinners.

This dish is also a great make-ahead dish. You can easily cook this the day before serving, and it reheats beautifully right in the skillet you cooked it in, or in the microwave.

What you’ll need for this recipe

This recipe is more of a method; there are minimal ingredients required here. You also can add any other ingredients you would like, use diced potatoes instead of hash browns, or use sweet potatoes. It can also easily be adjusted to serve more people.

Hey! I thought you didn’t eat turkey bacon, why turkey kielbasa?

I’m not going to lie, it took me years to try turkey kielbasa… and honestly, it takes exactly the same as the traditional one!I can only speak for the brand I use (Hillshire Farms) but I can not taste a difference whatsoever, and neither can Emilio (he doesn’t even know its turkey kielbasa, shhh!).

But, the turkey kielbasa is 100 calories or 3 WW points for 2 ounces, where as the traditional is 184 calories or 7 WW points (the fat content is higher).

You can use any kind your family prefers, or you can use any cooked, smoked sausage with a similar flavor profile.

How to make one pan kielbasa hash

This is truly a one pan dish. Everything is cooked in one frying pan, but it happens in stages. So make sure you have a decent sized one, preferably one with high sides to hold everything in.

Start off by chopping up the kielbasa. For this dish, I chopped it into half-moon shapes. Also, dice up your peppers and onions so they are ready to go.

Preheat a large frying pan over medium heat, and then add some olive oil spray. Add the chopped kielbasa, and cook the pieces for 10 minutes. Since the kielbasa is fully cooked, we are just looking to brown the pieces up and render some flavor.

After the 10 minutes, remove them from the pan and set aside. Then, add more olive oil spray and add your peppers and onions. Cook the peppers and onions for another 10 minutes, and season them with a pinch of salt.

Remove them from the pan, spray the pan again, and add the hash browns. These will cook for anywhere from 5-10 minutes depending on whether they were frozen or not. But, there is no science here, so just keep your eye on them. We are just looking for them to turn golden brown and crispy.

Once those are done, add everything back to the pan and stir to combine.

How to serve one pan kielbasa hash

The serving size for this dish (based on the amounts of ingredients I used) is one cup. Of course, this might vary based on the size of your peppers and onions.

This dish is great on its own, but if you are looking to bulk up the protein factor, you can serve it with some runny, over easy eggs. Break the yolk and mix everything together, and it’s heaven in a bowl. That’s also what makes this dish ideal for any time of day!

Equipment

  • frying pan

Ingredients

  • 12 oz Turkey Kielbasa
  • 2 bell peppers
  • 2 onions
  • 1.5 cups shredded hash browns
  • kosher salt
  • olive oil spray

Instructions

  • Preheat a frying pan over medium heat.

  • Cut the turkey kielbasa into half-moon shapes (cut in half lengthwise, then cut into slices).

  • Dice the peppers and onions.

  • Add olive oil spray to the pan, and cook the kielbasa for 10 minutes, tossing occasionally. The kielbasa is fully cooked; we are looking to brown the outsides and render flavor.

  • Remove the kielbasa from the pan, add more olive oil spray, and cook the peppers and onions for 10 minutes, tossing occasionally.

  • Season the peppers and onions with a pinch of salt. Remove from the pan.

  • Add more olive oil spray to the pan and cook the hash browns for 5-10 minutes or until golden brown and crispy. Season with a pinch of kosher salt.

  • Add the cooked kielbasa, peppers and onions back to the frying pan and toss to combine.
