It has 75% less calories and fat than traditional peanut butter. It can be used to add peanut butter flavor to your recipes when you want to reduce the fat and calories.

I love to use it in my Peanut Butter Banana Smoothies!

Each ball has 5 grams of protein and only 64 calories so no need to feel guilty!

The melted chocolate is infused with cayenne pepper because I love all things spicy. If you're not into it, just leave the cayenne pepper out. It will still taste delicious!

How to make low-fat peanut butter balls

  1. Place the peanut butter powder, powdered sugar and salt in a mixing bowl and whisk to evenly distribute the ingredients together.
  2. Add the water and stir. It will be very thick, like cookie dough.
  3. Scoop 1 tablespoon sized mounds of the dough onto wax paper and let it chill in the freezer for 30 minutes to firm up. Use a cookie scoop to get 1 tablespoon portions. This will give you 16 equally sized balls.
  4. Melt the chocolate chips and let cool to room temperature.
  5. Remove the dough from the freezer and roll them into smooth balls with your hands.
  6. Dip each one into the melted chocolate, place on a plate or cookie sheet lined with a piece of wax paper and pop them into the fridge to set up.

Once you mix the ingredients together, taste the dough and adjust the salt accordingly.

If the dough is too loose or sticky, add more peanut butter powder, about a tablespoon at a time, until you get a stiffer dough.

These low fat peanut butter balls can be made with a sugar substitute. I experimented with Swerve Sweetener, ConfectionersLow-Fat Peanut Butter Balls (5)and they tasted great. I found that more water was needed when using this type of sweetener to get the right batter consistency.

These taste better if you let them stay in the refrigerator overnight before serving, so go ahead and make them ahead of time.

Store these peanut butter balls in an air-tight container, in the fridge, for up to 4 days.

Ingredients

Peanut Butter Filling

  • 2 cups peanut butter powder
  • ½ cup powdered sugar
  • 1 teaspoon salt
  • cup water

Chocolate Coating

  • 8 oz. dark chocolate chips
  • ¼ teaspoon cayenne pepper optional

Instructions

  • In a medium mixing bowl, whisk the peanut butter powder, powdered sugar and salt together. Add the water and stir until well incorporated. The batter will be very stiff.

  • Use a cookie scoop to measure out 1 tablespoon portions and place them on a baking sheet lined with waxed paper. Place the sheet into the freezer for 30 minutes.

  • Melt the chocolate in a microwave, stirring every 30 seconds until you get a smooth, shiny consistency. (Add the cayenne pepper if desired) Let the chocolate cool but not harden.

  • Remove the peanut butter balls from the freezer and roll them into smooth balls with your hands.

  • Dip each ball in the melted chocolate, transfer them back to the waxed paper and place them in the refrigerator to set up. Keep refrigerated until ready to serve.

    This is BOMB. Love this. Easy to make and easy clean up. I used sugar free dark chocolate chips and that worked fine. I plan to dial down the salt a tiny bit for more balance. Other than that, i love this and a great alternative to all the junk out there. This is a winner. By the way, don’t freak out when mixing the PB with the water. It needs a few minutes and a good stir to absorb the water.

      I just did the math and the weight for 2 cups of peanut butter powder should be 256 grams.

      Easiest thing I’ve made in awhile. I really liked this recipe but as mentioned above next time I will use half the amount of salt. I really never used peanut butter powder before but a past recipe called for it and stuck with an almost full bottle left me no choice but to seek out recipes. Loved the taste and it was much easier to clean up when washing dishes than oily peanut butter.

    These are amazing! I just made them today! Im confused with the calories. I did the same recipe but it told me it was 128 calories for one ounce (1 in 16 balls). How do you get the calorie amount? How do I figure this out and get the same number you did?

    I love PB powder! I use it in all my smoothies! You do have to be careful with the brands. I used to be able to find PB2 and now I have to purchase another brand which is much sweeter.

    This is a great alternative for those of us who love Buckeyes at Christmas!

    So I just made these little balls of heaven....I had to make a few adjustments due to lack of ingredients and I wanted you all to know they were AMAZING still!!

    I used 1C PB powder and 1C natural PB
    had no vanilla and only 1/2 C powdered sugar so used 2 scoops Vanilla Protein Powder
    Had a little leftover shredded coconut so thought why not throw that in there!

    So my balls (haha) definitely are higher fat but much lower in carbs and much higher in protein and taste like candy.

    Also I have no idea how much more water I added because of the protein powder...I kind of just waited until the consistency felt right.

    Hope this was helpful for anyone needing to make adjustments 🙂
