This quick and easy skillet dinner is a great go-to family meal. Make it colorful with your choice of bell peppers, potatoes, onions and your favorite kind of Kielbasa sausage.
It can be hard to make a meal that pleases everyone in my family of six. I really tricked my picky eaters this time by using red and orange bell peppers instead of green ones. It seems like if they see something green in their food, they automatically decide they aren’t going to likewhatever it is I’m trying to feed them.
Everyone ended up liking this simple dinner. It’s fairly basic food: potatoes and Kielbasa sausage, so what’s not to like? I used Turkey Kielbasa, but any variety will taste great, so pick the kind your family likes to eat.
The only downside is that I use two skillets to make this dinner. I wish it could be just one skilletfor easier clean-up. Blame it on the potatoes. They need a longer cook time, so I start them in their own skillet. While the potatoes and onions cook, I prepthe peppers and sausage, then brown thesausage for just a few short minutes.The peppers go in with the sausage at the very end. This way, they get cooked without becoming soggy.
I fry the potatoes with the onions, but you could put the onions in with the peppers if you like for them to stay crunchy, too. My kids won’t eat big crunchy onions, so I fryonions in withthe potatoes so they are cooked softer and basically invisible.

Ingredients
- 1 14 ounces Kielbasa Sausage, Cut into 1/4 inch pieces I used Turkey, any variety works
- 2 Bell Peppers, Sliced Any color (I used Red and Orange)
- 1 Small Onion, Diced
- 2.5 pounds Small Potatoes, Sliced into 1/4 inch pieces
- olive oil
- Salt and Pepper to taste
Servings: people
Instructions
Heat 2 Tablespoons olive oil in a skillet on medium-high heat. Add the potatoes and onions and season with salt and pepper. Fry the potatoes and onions together, stirring frequently, until potatoes are golden brown and cooked through. Approximately 8-10 minutes.
Meanwhile, in a separate skillet, heat 1 tablespoon of olive oil and heat on medium-high. Brown the sliced Kielbasa sausage for about 5 minutes. Add the peppers to the skillet and season with salt and pepper. Cook until peppers are softened but still crunchy, about 3 to 5 minutes, stirring occasionally.
Add the Kielbasa and peppers to the potatoes skillet. Mix everything up and serve while hot.

I love my cast iron skillet. Right now I only have one: this Lodge Cast Iron 12-inch skillet, but one day I want to another one, probably a slightly smaller size.
A mandolin makes it easy to slice a lot of vegetable and potatoes really quickly. I totally forgot I had one! I used this Wavy Knife to slice the potatoes. If you look closely, you can tell they are wavy slices. I didn’t forget touse mycutting board.
