Flapjack Cookies

When I get cravings for something sweet, I want to make something delicious that is low in points that the whole family can enjoy and these Carrot Cake Flapjack Cookies are perfect.

Often when we do some baking with the kids, it's a cake or cookies recipe that contains heaps of sugar and far too much temptation for anyone who is trying to be good.

No need to feel guilty when enjoying a couple of these, a perfect treat with a cup of tea or coffee and some chopped fruit like a honey crisp apple. If you love flapjacks then these are a great low alternative.

Making Cookies with Less Sugar

Dried fruit is a perfect ingredient for adding some sweetness and certain kinds qualify as a choice, meaning we can use them in a recipe like these Carrot Cake Flapjack Cookie and keep the value low.

If you have never tried dates, then boy areyou missing out, they a seriously yummy and kind of taste like a treacle piece of toffee.

Along with some lemon juice, zest and little bit of honey, it becomes a great binder for all the other ingredients.

Gluten Free Flapjack Cookies

These are a no flour cookie recipe, instead, I opt for some gluten free porridge oats. Also a B choice and one of the main ingredients you will find in a flapjack.

Hey, these yummy cookies even contain some speed foods in the form of grated carrot and did I mention that my kids LOVE them, so it's a great way to sneak some vegetables into their day. They too can enjoy these as a snack.

Cinnamon and allspice - the last ingredients and I love the subtle flavour they add to these cookies.

Other Dried Fruit?

For the chopped date part of the recipe, you can swap that out for any other dried fruit if you prefer.

Chocolate chips are always a great addition to any cookie recipe.

Carrot Cake Flapjack Cookies

Yield: 10 Cookies

Prep Time: 15 minutes

Cook Time: 30 minutes

Total Time: 45 minutes

Ingredients

  • 120g (4.5o) of porridge oats
  • 40g (1.4oz) of pitted dates, whole
  • 40g (1.4oz) of pitted dates, finely chopped
  • 1 tbs of lemon juice (plus a little zest)
  • 1 tablespoon of honey
  • ⅓ cup of grated carrot
  • ½ teaspoon of cinnamon
  • ¼ teaspoon of all spice
  • cooking oil spray (I used coconut)

Instructions

  1. Preheat oven to 180c/FAN 160c/350f or gas mark 4
  2. Place the oats into a bowl with the cinnamon, carrot, all spice, and finely chopped dates and mix to combine.
  3. Add the whole pitted dates to the food processor and blitz until it becomes a paste.
  4. Add the date paste to a saucepan, along with ½ cup (120ml) of water and heat over a medium high heat for a few minutes, until the water reduces down and the paste is nice and smooth.
  5. Add the honey, lemon juice and zest and stir until combined.
  6. Stir this into the oat mixture until all mixed together.
  7. You can then divide mix into 10 equal sized balls, then place the ball into a 2.5 inche cookie cutter on a baking tray lined with parchment, spray over the top of the ball with the cooking oil spray and press down firmly until flat in the cutter, then carefully remove the cutter and repeat with the other 9 balls. (If you prefer, you can form into 5 bar shapes.
  8. Baked for 25-30 mins until lightly golden. Allow to cool on a wire mesh.
  9. Enjoy!!
