Healthy Chocolate Weetbix Bliss Balls (2)

Bliss balls and energy balls are one of my favourite thing to make because they are quick and easy. Some of my faves are: Peanut Butter Bliss Balls, Coconut Bliss Balls, Apricot Bliss Balls, Nut Free Bliss Balls, Date Free Bliss Balls and Lemon Cheesecake Bliss Balls

How ToMake Weetbix Balls

  1. Prepare: Remove seeds from dates if you didn't buy pitted dates. If dates have been in the fridge and are hard or firm, microwave them for 30 seconds to soften, soak in a bowl of hot water for 5 minutes than press to sqeeze out excess water. Crumble weetbix and set aside.

  1. Make Date Paste: Add the softened dates and water to the food processor and blitz for 30 seconds to make a date paste. (The softer the dates are to begin with the better the date paste will turn out)

  1. Make Weetbix Ball Mixture: Add the peanut butter, weetbix, cocoa powder and coconut and blitz until all mixed together.

Recipe Tips

  • Weetbix Dust: this is finely ground weetbix, cocoa powder and ground cinnamon blitzed in a food processor and adds great additional texture nd taste to the bliss balls and well worth the little bit of effort.
  • Protein Boost: Instead of cocoa powder, you might like to use the Chocolate Protein Powder to increase the protein factor even more!
  • Dates: Regular dates aren’t as sweet as Medjool Dates, and are also tougher. If you make them using regular dates, you might need to add extra and soak them beforehand to soften.
  • No Dates: If dates are not your thing or you don't have them on hand, you can use the same amount of dried apricots instead.
  • Quantity: This recipe makes 9 generously sized balls which for me is the perfect snack size. You could make 18 small weetbix balls that would be more bite sized.
  • Freezing: Weetbix balls freeze really well for upto 3 months. The easiest way is to add them to an air tight freezer safe container. You can separate them using baking or parchment paper if you want to make it easier to separate them, although I don;t generally have a problem with them sticking together. Freezing is a great idea if you're doubling the recipe to make a larger quantity.
  • Defrosting: take them out of the freezer and place into the fridge overnight to let them defrost naturally.

Weetbix Dust Alternatives and Tips

  • Spice combination: Instead of adding ground cinnamon to all the weetbix dust, separate it into 3 and stir through ground cinnamon for the first, ground ginger for the second, and ground chilli for the third. This will give you 3 slightly different flavoured weetbix balls.
  • Extra Chocolate: Get your hands on a no added sugar chocolate bar and finely grate it into the weetbix dust
  • Tumeric: Skip the ground cinnamon, and instead swap it for ground turmeric powder
  • Granulated Peanuts: For added texture you might want to add some granulated peanuts to a few of the weetbix balls.

Common Questions

Can you taste the weetbix?

Not really. Although it does add a bit of texture. Lets face it, weetbix is dry and flaky and doesn’t taste that great on its own. The point being, you need to eat it with something.

Often weetbix balls are loaded with sugars and processed ingredients and are not really ideal as a breakfast food. But these healthy weetbix balls are naturally sweetened, low in sugar and high in fibre which means they will keep you fuller for longer.

Easy to make, portable and great for on the go breakfasts as you head out the door, with your morning coffee and as a lunchbox filler. Get a head start on your weekly meal prep and put these weetbix balls on you weekly to do list.

Ingredients

  • ¾ cup crushed weetbix - 2 weetbix
  • ¼ cup water + 2 tablespoons
  • 200 grams Medjool dates - at room temp (approx. 12 large)
  • 2 tablespoons Sugar Free or Natural Peanut butter
  • 3 tablespoons Unsweetened Cocoa Powder
  • ½ cup Unsweetened Shredded Coconut

Weetbix Dust

  • 3 weetbix
  • 2 tablespoons Unsweetened Cocoa Powder
  • 1 teaspoon Ground Cinnamon

Instructions

  • Prepare: Remove seeds from dates if you didn't buy pitted dates. If dates have been in the fridge and are hard or firm, microwave them for 30 seconds to soften, soak in a bowl of hot water for 5 minutes than press to sqeeze out excess water. Crumble weetbix and set aside

  • Make Date Paste: Add the softened dates and water to the food processor and blitz for 30 seconds to make a date paste. (The softer the dates are to begin with the better the date paste will turn out)

  • Make Weetbix Ball Mixture: Add the peanut butter, weetbix, cocoa powder and coconut and blitz until all mixed together. (about 1 min).

  • Check Mixture: If the mix is too wet, add more coconut. If the mix is too dry, add a little water. (one tablespoon at a time). Refrigerate mixture for 30 minutes to firm up before rolling. Meanwhile, clean and dry the food processor for the weetbix flakes.

  • Roll Into Balls: Roll chocolate weetbix mixture into 8 large or 16 small balls, one at a time, rolling in the weetbix flakes as you go which will help them come together. To make the weetbix dust, add wetbix, cocoa and cinnamon to food process ad blitz for 5 seconds, and roll each ball in the dust to coat.

  • Refrigerate: Store balls in an air tight container in the fridge for 2 hours to firm up before eating. They will keep fresh in the fridge for 1 week.

Notes

  1. Can you use regular dates? I wouldn’t recommend it as the medjool dates are sweeter than regular dates and you really need the sweetness from the dates in this recipe since it is the only sweetener.
  2. Peanut Butter Substitute: Swap out peanut butter for your favourite nut butter.
  3. Can you freeze these? Yes these are freezer friendly. Pop them into a freezer friendly container and let them defrost naturally before eating. They will freeze well for 6 weeks – if they last that long!
