Once the cooler fall and winter weather hits I start craving recipes with hearty ingredients – things like potatoes, hearty breads, ham and sausage.
What’s even MORE hearty is to combine several of them together into one satisfying dish.
What makes me even happier is when it is a super easy to make one dish meal, which is what we’ve got with this Cheesy Sausage and Potato Bake.

I have been a big fan of Buddig ever since I was a kid, but the company goes back way before that even. Carl Buddig & Company and Old Wisconsin (making Buddig lunchmeat and Old Wisconsin hardwood-smoked sausage and snack products) has been family-owned and operated by the Buddig family for more than 72 years.
They value the importance of family traditions and for them family extends to its employees, sales associates, consumers and the community surrounding its plants and headquarters.
But back when I was a kid, all I cared about was that they made realllllly good ham. I remember one summer when I was in junior high I ate Buddig ham and cheese bagels almost every single day until school started again in the fall.
I would put slices of Buddig ham and a slice of cheese on a bagel, wrap it in foil, and cook in the oven until the cheese was melted. My mom wasn’t crazy about me heating up the house with the oven every day, but it was so delicious I just couldn’t stop.
While I still think my teenage recipe was a good, it’s time to create some new ones. Are you ready for the challenge?
The secret ingredient for the Make it Delish Recipe Contest during November is potatoes, so I decided to come up with a hearty fall dish based on that theme. My summer sausage casserole makes a whole dinner in itself or you can also serve it as a side dish.

Cheesy Sausage Potato Bake Recipe
Ingredients:
1 1/2 pounds potatoes
4 oz Old Wisconsin Summer Sausage or leftover ham
3 Tbsp onions, finely chopped
1 Tbsp olive oil
salt and pepper to taste
1/2 cup shredded cheese
How to Make Cheesy Summer Sausage Potato Bake:
Preheat oven to 375 degrees.
Wash and dice potatoes.
Dice summer sausage in pieces about half the size of the potatoes.
Place potatoes in a small, greased casserole dish.
Microwave 5-7 minutes or until potatoes begin to soften.
Add sausage, onion, olive oil, salt and pepper to the potatoes.
Bake 30 minutes.
Sprinkle with shredded cheese.
Return to oven for 10 minutes or until cheese is melted.
