This time around, I decided to take a classic apple pie empanada and add cinnamon, cinnamon sugar, and caramel drizzle to make a caramel apple version that’s absolutely out of this world. Bring water, cornstarch, sugar, cinnamon, and lemon juice to a boil in a medium saucepan over low heat, stirring constantly, until the sauce thickens. Then, add the chopped apples, stir, and simmer for 8 to 10 minutes, stirring occasionally. Set aside to cool.

Step 2: Make the Cream Cheese Fillings

Beat the cream cheese until fluffy in a medium bowl. Then, add the sugar, vanilla, and lemon juice and beat for another 2 minutes.

Step 3: Fill and Fold

Add 1 tablespoon of cream cheese filling to the center of the empanada dough followed by a tablespoon of apple cinnamon mixture. Moisten the edges of the dough, fold it over the filling, and pinch with your fingers. Finish by crimping the edge with the tines of a fork.

Apple Cinnamon Filling

  • In a medium saucepan, over low heat, bring water, cornstarch, sugar, cinnamon and lemon juice to a boil, stirring constantly.

  • Once the sauce has thickened, add chopped apples, stir and let simmer for 8-10 minutes, stirring occasionally.

Cream Cheese Mixture

  • In a medium bowl, beat cream cheese until fluffy, about 2-3 minutes.

  • Add sugar, vanilla and lemon juice. Beat for an additional 2 minutes.

  • Add 1 tablespoon of cream cheese filling in the center of the dough followed by a tablespoon of apple cinnamon mixture.

  • Moisten the edges of the dough with water, fold in half and crimp the edges closed with a fork.

  • Heat oil in a cast iron skillet or frying pan to 375°.

  • Work in batches, and place a few empanadas at a time in the pan. Fry until golden brown on both sides.

  • Remove from the pan and place on a plate lined with paper towels.

  • In a small bowl, stir cinnamon and sugar together.
