I am excited to tell you about something that I recently discovered. It’s made with all natural ingredients, is preservative-free, vegan, and nut free. It’s Biscoff Spread, and it’s fabulous! This sweet, creamy, decadent spread is perfect over toast, with apples slices, or simply grab a spoon and dig in!

Are you familiar with Biscoff Spread? Biscoff Spread is a new irresistible, spreadable European treat made from Biscoff Cookies. The consistency is similar to peanut butter, and it can be used in many recipes. In fact, there are so many delicious recipes using Biscoff, I have a dedicated Biscoff board on Pinterest.

Of course when I got my hands on a jar, I was excited to try it in lieu of peanut butter in some of my favorite recipes (though it was hard to resist eating it straight from the jar!) The results were fabulous! Today I am sharing one of our favorites –Biscoff Buttermilk Pancakes. This recipe is adapted from my Peanut Butter Pancakes recipe. They are light and fluffy, made with whole wheat flour and buttermilk, and best of all….Biscoff Spread! To top them off, I made a Biscoffdrizzle which was sooo good!

Back in July, Lotus Bakeries invited consumers to share the many inventive ways they enjoyBiscoffSpread – the cookie spread made from the popularBiscoffcookies – in the first-everBiscoffSpread the Love Challenge. TheBiscoffSpread the Love Challenge had consumers to get creative with theirBiscoffSpread snacks by uploading photos that show their favorite ways to “spread the love.” Whether a spin on a classic snack (such asBiscoffSpread on a bagel) or a more creative twist (such as brownies made with the spread), the makers ofBiscoffSpread looked for individuals to submit photos showing how they enjoyBiscoffSpread.

Now Lotus Bakeries have narrowed down the photo entries to the top 30. Facebook users will vote for the final grand prize winners on theBiscofffan page. All entrants will be automatically entered in a sweepstakes to win a year’s supply ofBiscoffproducts.

The top three winners of Biscoff’s Spread the Love Challenge, to be announced on August 30, 2013, will receive the following prizes:

  • First place – A trip to Belgium for two and a tour of the Biscoff factory
  • Second place – $1,500 cash
  • Third place – $1,000 cash

Here’s how you can vote!

  1. Visit Biscoff’s Facebook page or the contest microsite.
  2. “Like” Biscoff on Facebook and vote for the grand prize winners between August 5 (12 a.m. EST) – August 25 (11:59 p.m. EST).
  3. The top three winners will be announced on Facebook on August 30!

Biscoff Buttermilk Pancakes are light and fluffy, whole wheat, buttermilk pancakes made using Biscoff Spread.

Yields: 4 servings

Ingredients

  • 1½ cups whole wheat pastry flour (or all-purpose flour)
  • 2-3 tablespoons brown sugar, packed
  • 1½ teaspoons baking powder
  • ½ teaspoon baking soda
  • ¼ teaspoon salt (optional)
  • 1¼ cups low fat buttermilk
  • ½ cup Biscoff spread
  • 1 tablespoon canola oil
  • 1 teaspoon vanilla extract
  • 2 large eggs, lightly beaten

Instructions

  1. 1.In a large bowl, combine the flour, sugar, baking powder, baking soda and salt (if using). Set aside.
  2. 2.In a separate bowl, whisk the buttermilk, Biscoff spread, oil, vanilla and eggs, until well-blended.
  3. 3.Add Biscoff mixture to flour mixture, stirring until just combined. Let sit for 10 minutes.
  4. 4.Preheat large nonstick skillet (or griddle) to medium (about 325 degrees).
  5. 5.Pour batter onto griddle (2 tablespoons to ¼ cup, depending on desired size of pancakes). Flip pancakes when top are covered with bubbles and edges look cooked (about 2-3 minutes). Cook the other side until set (about 2 minutes). Serve warm.

Notes

To make the drizzle, I used 1 part Biscoff spread to 2 parts pure maple syrup, and stirred it with a fork until combined.
