It isn’t a celebration without champagne, and though drinking it all on its own is classic, we’re always fans of mixing things up (literally!) during the holidays in the form of champagne co*cktails. One of our favorites? The mimosa. If you’ve never made one from scratch before, a classic mimosa is simply 4 parts champagne and 1 part fresh orange juice. It’s straightforward perfection, which means you’ve got to take care with your ingredients (no one wants a cheap champagne headache on Christmas) AND that they're ripe for improvisation. Though we’re happy to drink a mimosa any time of day, we do think some recipes lend themselves more to a light and flirty brunch vibe than to a sultry, evening soirée. That said, serve any of these co*cktails from morning to night—they’ll turn any occasion into a festive celebration. For the mornings (or early afternoons, who are we kidding?), we like to swap the orange juice for thick pear nectar, bitter grapefruit juice, or sweet-tart pomegranate or cranberry juice.
